This is an in depth, but relaxed and enjoyable, one day Saturday Class looking at how we cook our whole hogs to produce some of the best barbecue known to man!

The Whole hog session will include pig selection, all preparation and the cooking of our own preferred style of pit cooked hog, which is done lower and slower to produce what is our favourite, pulled mixed meat barbecue, crackling chopped and mixed into the meats as well as thin vinegar based sauces to cut through and complement the meat.

The day will end with tasting comparisons of the differing results along with some freshly prepared sides as part of an evening meal together.

Whole animal cooking is at the heart of traditional barbecue, it’s about sharing, community and feeding a crowd. It’s also a great, cost effective, and great fun, way to also effectively batch cook meats for storage and later use in whole range of other dishes. Come and learn how this is done and then enjoy a great meal in the evening.

Course attendees are encouraged to invite family and friends to join us all from 6pm with the evening ‘pig pickin’ featuring delicious whole hog barbecue buns, great sides and drinks from the bar for a relaxed evening at the smokehouse (Choose the evening feast ticket option). People not attending the course, but who want to come for the evening can simply book using the guest ticket option too!

Course Places are limited. The day is fully catered throughout the day, including teas/coffees and some drinks. On site Camping options available. Local accommodation recommendations on website. We suggest heading down on the Friday evening if coming from away as its a reasonably early start (Approx 9am – 9pm)
