Who better to learn from than someone with 27 years experience in commercial kitchens, the driving force behind MCR Smokehouse, and now the Quarterhouse Beer & BBQ in Manchester’s northern quarter, as well as such well loved establishments as The Living Room, 3 TwentyOne Smokehouse & Grill, Solita and many others.
Jason and his team have also taken a whole sack full of first places across multiple national BBQ competitions and is the current reigning UK Firecook of the Year. Like we said, if you’re going to learn BBQ, then learn from someone who has been there, seen it and done it!
Love from the Streets BBQ course weekenders are being hosted at the amazing ‘Smoke on the Waters’ providing a great location with the perfect facilities for cooking with fire and smoke, featuring an all weather venue with a licensed bar, camping and full kitchen on site.
This amazing outdoor cooking weekend is more than just a course, as Jason and his team will be providing not only in depth classes, but hands on experience with a huge range of equipment and to top it all, he will be catering for you in style across the weekend,
Friday night arrival will see an introductory session and social, with examples of great BBQ canapes and cocktails, before sitting down for a live fire banquet, showcasing Jason’s unique style as the perfect way to start the weekend.
Saturday then sees a full day of demonstration, tuition and lots of one to one time, as a whole host of dishes are prepared on ceramic grills, gravity fed smokers, stick burning offsets, popular bullet and drum smokers, as well as live fire grilling equipment.
The course covers all aspects from lighting and maintaining the best fire, controlling the temperatures effectively, as well as a host of different cooking methods, hints and tips on how to build flavour and create truly delicious dishes, leaning on Jason’s decades of experience to add those chef’s twists, making every meal you cook that bit more special.
Methods covered will include classic low and slow techniques, but also time efficient hot and fast methods, grilling, live fire cooking, as well as explanations on fuel choice, meat selection and preparation, use of rubs, marinades and other elements to help build layers of flavour and how to finish your dishes with flair.
After a full day learning, talking, cooking and eating, Sunday will feature a nice relaxed breakfast, cooked by your chef over the fire and a chance to discuss the highlights of the course and any questions that have arisen before you head off. You will not be leaving empty handed either…
